The question of "where in the castle is [blank]?" has been one that has pretty much existed within the guild since its beginnings. Earlier on, Shino created various threads of the different areas of the castle that gave an idea of their placement, but as they were not used they were all in the end deleted.
As the guild RP is presently suspended, I feel this is the perfect time to finally answer this question.
In doing so, I propose the following placement of areas within the castle, based upon earlier such ideas first crafted by Shino and accompanied by the reasonings I see quite fittingly falling behind them.
The west, where the sun sets, carries illness into its abyss, thus justify the infirmary's presence there in a place of healing.
The south, typically being of fire and aggression, is a fitting home for the armory and the war chamber.
The north, symbolic of the earth and foundation, fits as the home of the Knights' quarters as the kingdom's foundation lies in the unity of the Knights.
The Great Hall, being the gathering spot of all the knights, is representative of the kingdom's heart, thus is at the castle's core.
The castle's dark places are deep within the earth, thus suggesting imprisonment and impenetrability (and also hidden secrets and dark pasts that can be sparingly drawn upon for interest and intrigue).
Finally, this poll shall remain active as long as the roleplay remains suspended (or until all members vote).

The library, servant's quarters, and kitchen = the east wingThe east, where the sun rises, ushers in wisdom (the library); as well, the servants are likely the first to rise each day, and the kitchen, where many of them tirelessly work, should be near their quarters.
The infirmary = the west wing
The armory and war chamber = the south wing
The Knights' quarters = the north wing
The Great Hall = the castle's center
Dungeons, prisons, and other such "dark" places = beneath the castle
