So I edited my concept document to share here, at Lizica 's suggestion. Different pieces were written at different times, which is quite clear...

This is the document I used to track plot, personality and character interaction details.
This second document was the one I used to track actions taken by power roles at night! I uhhh...didn't know that the wolves' target in night four wasn't random! Somehow I forgot...I really thought I remembered being upset when the target was chosen. Maybe it wasn't entirely random, and I listed two options to randomly select between? Or maybe I meant that the attacking wolf wasn't chosen at random? We may never know!

Also Grey's character notes give me an idea of how to actually introduce him earlier in the story, but...it might seem too obvious that the Nice Baker Guy is one of the werewolves, since the werewolves are all really nice people. Hmm.

Village is called Streamfarm- "because there's a stream...and a farm...people aren't too imaginative out this way."
Assign all roles randomly (except for the 'white werewolf', who is important in all endings- depending on how the game goes for the town, he will either learn that he is a reconciled wolf/human soul and help the witch/whoever fix the others. He might die in the bad ending, or maybe his souls will split again and he will start attacking humans again.)
White Werewolf: functions differently than its actual in-game card. He attempts to defend the villagers from other werewolves rather than harm them. Only character who does not work randomly, as I need some control over the narrative- what he does and what happens to him is affected by what goes on around him.
In the good ending, the Amnesiac remembers what happened to him and the witch is able to fix the surviving werewolves under his direction, so instead of fiends they are defenders of the village by night. However, make it clear that it will take a little while for them to regain the trust of some villagers...

Preset/no role:
The Amnesiac, the white werewolf, Perseverance- He arrived in town as the murders begin, with no memory of who he is- not even a name. The night watcher keeps him in their house to keep him safe (as in original Fallen Salem), with all the werewolf activity going on. He is 22 and frail.
He has forgotten everything about who he is, but remembers all else. This is what happens when somebody turns into a werewolf as well, when the souls are still separate. So he can imagine what it is like to lose a mother, because he knows about family dynamics in theory- he knows about them, has read about them, and has high empathy. He just can't remember his own mother, so has no personal experiences to draw from.

Need to explain his analytical mind! Which is why he favours overly long descriptions. Good attention to detail- tends to distract himself with small details when under stress. [Background stuff goes here, edited out in case I choose to write more about him.] His background is also why he tends to analyse as soon as confronted with a situation.
Appreciates compassion, doesn't like being pitied. Has a habit of staring at people or things he's thinking about.
The Priest- Floren writes for assistance from the nearest town, Northpass. Streamfarm is technically under the town's protection, but it doesn't care a lot about them. It sends a trainee priest to assist, who is looking to ID werewolves in the town. Anxious, high-strung, and with a desperate nervous laugh. Dark skin and frizzy dark hair. Bigender.
Loves to wear pins and buttons and bright things, but in her grey robes there is only so much she can do. So she has a simple set of pins which she alternates: a circular blue one with the Mars symbol on it in darker blue, and a circular pink one with the Venus symbol on it in red, to let others know her gender identity at a given time. There are also behavioural cues, but more difficult to pick up on if you don't know her.
The Priest has 'the Savior' villager ability, borrowed from the New Moon expansion. He can protect one player each night from a Werewolf attack, but not the same player two nights in a row (and if the Little Girl is attacked and he is trying to defend the Little Girl, she dies anyway.) His target is chosen at random. Only in effect once he arrives in town, obviously.

Florentine "Floren"- Drawing from Fallen Salem's "Scrupulous Detective." All guards have a higher chance of being targeted at night (two chances instead of one- but they are armed, not that it does anything in the actual game mechanics unless they are The Hunter.) 26 years old. If Millicent or Nicholas die, they will lose any sense of mercy they feel towards the werewolves.
More or less under their own instruction at night, but ultimately still answers to Michael. Very polite- always asks if people are okay with x or y, instead of demanding they do things. A little pale. Curly golden hair, amazing cheekbones, hazel eyes with flecks of blue or green when the light strikes them, according to "prompt 25 liked."
Werewolf. On night one, the shock of seeing Grace dead (they have only been recently turned at this stage) was enough to force them to shift back. The fact that the night was overcast, and so the moon's power limited, helped. They saw the other werewolves and ran.
There are gaps in their memory. They blame it from being overtired and stressed, but the truth is somewhat different: [backstory stuff on how they got turned goes here, I don't think I'd ever reveal this in a sidefic, but editing out just in case.]
Unless contradicted elsewhere, their height is 6'0".
Nicholas- another member of the watch. Floren's older brother, at 28. Armed, but again won't matter unless Hunter. Villager. 5'11"
Millicent- 25 years old. Has a daughter, five years old (with Nicholas, who she is married to), who does not have a role but will die too if Millicent is a victim during the night.Villager. Allie is the daughter's name.
Amelia- a third member of the night watch. The quietest, usally only piping in with the occasional saracastic comment (besides genuinely useful remarks) when conversing with the others. 25 years old. Armed, but again won't matter unless hunter. Villager.
The Baker- mostly gets by baking the village's daily bread but, for special occasions, his cakes are to die for. Has an apprentice and every time the werewolves take a victim (or a lynching occurs), the pair of them send bread out for free and give the apprentice a package of the bereaved's favourite muffins to take as well. Name is Grey. Werewolf.
The Seamstress- Alice. She makes clothes. The only person in town who does so, so pretty much everything that wasn't ordered in or bought when travelling comes from her. Feels bad for the amnesiac's situation, and gives him some wearables (though the watcher intervenes and insists on paying her some gold, at least, for her efforts, from their own pocket.) Villager. Grace's daughter.
The Grocer- Female. Most food either comes from her, or a weekly market day in a nearby larger village (where people of this one go to buy and sell goods.) There is also a larger market in the overseeing town which some go to once a month, or on special occasions, to see the wider variety of goods. The Witch. All she has to do to make the 'werewolf cure' is mix the ingredients for her two potions together. Named Mildred. 5'7".
(SIDE NOTE ADDED WHEN POSTING: Mildred is no longer a grocer, but this was the original idea I had for her.)
Farmers x2- aging couple, man and woman, who work a small farm just beyond the village. They supply the grocer with some things and frequently appear in town for clothes or other goods. The first sign of werewolf activity in the area was when their livestock started disappearing- they want one of the watchers to protect what's left, but those stay in town, believing human life to be more important. M (Gabriel)=villager , F (Augusta, married into this one from another village)=villager. Amelia's parents.
Michael- Lives with his young daughter and son, also named Michael. A town guard, works during the day. 38 years old. Unofficial head of the village. Little girl. Each night he has a 1 in 3 chance of being seen by the werewolves, but if he does survive he can say for sure how many werewolves there are (four, he won't see the white until night three- if he's alive, he will mention the white one the day after.) He has a 1 in 2 chance of learning the identity of a werewolf, with the chances heavily weighted towards the one he discovers being his daughter (1-3=daughter, 4=baker, 5=Floren, 6= Simon.)
Heavyset. Heterochromia. Brown hair.

Elizabeth- Michael's daughter. Eleven years old. Werewolf.
Brown hair, lots of freckles.
Calamity- mid twenties former ship's captain. Seen Some Things, wanted to move well away from it all. Sibling of Simon, so staying with him for the time being. They arrived only a matter of months before the whole mess started, so are immediately a target of suspicion, though Simon gets aggressive with anyone who tries to accuse them of being a werewolf. The have the scars of an alarming wound down one arm, which they will try to hide. Yes, this is my FL Calamity, I miss them too much not to use them again in a spookystory. XD
Seer!
Very confident- won't say things like 'the way I see it' or 'I think/believe', unlike the protagonist or even Floren. States opinions as facts.
As a veteran of many Weird Crazy Supernatural Things (including the 'calamity' which gave them their name), they are level-headed and immediately prepared to deal with the werewolf issue, as opposed to the other players. Immediately after night one they will bring their seer results to Protagonist if they have anything of note.

Grace- an artist. Paints beautiful disturbing drawings of the game's events (in-universe, the art featured on the cards was done by her, perhaps?) 50 years old. A widow for some years now. Alice's mother. Villager. (fell victim to werewolves- night one.)
Michael- Elizabeth's little brother. Eight years old. Villager. (victim of werewolves, night two.)
Simon- dayshift guard. Calamity's brother. Frequently bored and complains to anyone in earshot. The town in general are getting sick of him. 22 years old. Werewolf. 5'10"

Emma- the baker's apprentice. Baking is her passion, and she especially wants to learn how to make the muffins! Fifteen years old. Uber enthusiastic about allll the things. The Hunter (victim of werewolves, night four.)

Little Girl: Not seen by wolves, learned Floren's identity when he ran across their injured wolf form collapsed in the road, shifting back in the morning sun. He has them arrested as a result, not entirely sure what else to do as he can't exactly have his bemused and frightened friend executed.

Werewolves: Michael Jr (whose sister is a wolf and father is the little girl.)
Seer: Emma (the Hunter- Calamity recognises a girl more determined than frightened, who will not allow the wolves to take her.)
Little girl: Not seen by wolves. Does not learn the identity of any further wolves. (changed so that he learns his daughter's identity, because it just makes sense here.)
