It's named after the cutting process, called frenching. :3 Hence french fries, or its more proper name, french fried potatoes. Should be sensible like the English and call them chips And then what you call chips, we call crisps. lol.

Maybe Belgium suffered the same fate as Wyoming. According to a Garfield TV episode, Wyoming is an Italian word meaning "No state here". I'm kidding, of course.
